Puppy Chow (Gluten Free!)

There is something so sweet about going to a friend’s house and them having something homemade waiting for your arrival. Whenever we have guests, whether for dinner or a couple of nights, I love having something waiting for them since I know the joy it brings me. All that to say… I don’t always have the time to make something involved and am constantly looking for recipes that I can whip up in a bind. 

My sister-in-law and brother-in-law are visiting this weekend and (of course), I didn’t have a lot of time. Also, my sister-in-law is gluten free! So I needed a recipe that was not only quick and easy, but also sans gluten. In comes Puppy Chow… 

Here is what you will need…

  • 1 12oz box of Rice Chex (found in the cereal aisle) 
  • ½ cup of peanut butter
  • 1 cup of semi-sweet chocolate chips
  • 2 cups of powdered sugar 
  • Gallon-sized plastic bags
  • Tin foil or parchment paper

Here’s what you need to do…

  • Pour the cup of chocolate chips into a medium saucepan and heat over low heat
  • When the chocolate chips are almost melted, scoop in your ½ cup of peanut butter
  • Stir on low heat until peanut butter is mixed in and the chips are melted 
  • Divide the Chex into 2 gallon-sized plastic bags
  • Pour ½ of the chocolate/ peanut butter mixture into each plastic bag 
  • Shake until the Chex is coated with the chocolate/ peanut butter mixture
  • Pour 1 cup of powdered sugar into each bag and shake until coated 
  • Once all of the Chex is coated with chocolate and peanut butter, lay out a strip of tin foil or parchment paper
  • Slowly pour out the contents of each bag onto the tin foil or parchment paper
  • Let sit on the counter until cooled, then store in an airtight container

One other note… This is an easy dessert to dress up for a holiday. For a Christmas Party last year, I bought M&M’s that were red and green and mixed those in with the finished/ cooled Puppy Chow. You can’t go wrong with M&M’s!
