Happy Wednesday! The older I get the more I’m into cheesy holiday things. So this week I decided to try two different kinds of easy Halloween treats. There is hardly any baking involved with these treats, more just constructing. The best part is it took me less than an hour to finish both treats!
Chocolate Spider Cupcakes
For these cupcakes, I just used box mix and canned frosting. You can by all means make both from scratch, but I don’t think it will add or take away from the final result! For these you will need:
- Chocolate cake mix + ingredients
- White frosting (cream cheese or buttercream will do)
- Black/dark brown decorating frosting
- Optional: candy eyes
Bake and frost your cupcakes. Make sure there is enough frosting to create a dome and that it is relatively smooth. Using your black decorating frosting (I just bought a Betty Crocker kind from Publix), pipe three legs for each side of the spider. Start from the center of the cupcake and let the frosting stretch out of the tube. Once legs are piped, break open an Oreo and place it over the middle of the legs. Then, either use the black and white frosting to pipe on the eyes to the Oreo, or place a small dab of frosting for the candy eyes to sit on and apply the candy eyes. Voila! It’s that simple.
Pumpkin Rice Krispies
This seriously took me ten minutes. It was so easy and they are so cute and yummy! For these you need:
- Rice Krispy cereal
- 10 oz bag of marshmallows
- 1/4 stick of unsalted butter
- Red and yellow food coloring
- Rolo candies or mini Reese’s cups
- Green m&ms
Add your butter to a large pot and melt on medium heat. Add the bag of marshmallows and stir continuously (if you don’t it will burn and turn colors). Add in your food coloring. I used about a 1/2 ratio of red to yellow. The more food coloring you use, the deeper orange you will get. Once you have your desired color and the marshmallows are melted, take the pot off heat and add in 5 cups of the cereal. Mix until well combined. Take handfuls of the mixture and use your hands to roll into balls. Place on a sheet of parchment paper. The quicker you work with the rice krispies, the less they stick to your hands. Take your Rolos or Reese’s and press them into the centers of the balls. This will smush them down slightly, but that will give them more of a pumpkin shape. Next, add your green M&M’s next to the chocolate candies. There you have it! Try not to eat all of them in one night!
