Cake Mix Cookies

You guys know I love a good doctored up box cake. Well turns out, box cake makes a pretty good cookie too! It’s all about the correct ratios of egg and oil.

I’ve never had red velvet cake, but I thought it would be a pretty cookie to include in my Christmas cookie box. You can follow the below recipe for any combination you desire!


1 15.25 oz boxed cake mix (I used red velvet)

2 eggs

1/2 C oil

1/2 tsp salt

1 C mix-ins (I used white chocolate chips)


Mix eggs, oil, and salt until well combined. Stir in cake mix and mix until well combined. Fold in chocolate chips. Refrigerate dough for at least 20 minutes.

Preheat oven to 350F. Using a tablespoon cookie scoop, scoop dough onto parchment lined cookie sheet. Keep 2 inches between dough balls and bake cookies for 10-12 minutes. Do not over bake.

That’s it! These are the easiest cookie to make, and you can rest assured they will bake correctly every time.
