I never really know a good gift to bring to White Elephant gift exchanges. In my head, they are supposed to be silly gifts… a vibrating head scratcher, a mug with a random initial, a Fanny pack with a picture of a hairy belly. But, there’s always the folks who bring real gifts, like gift cards and candies.
Well this year, I received a gift that struck a perfect balance – equal parts absurd and useful.. a 2lb bag of pecans!
And what better to do with 2 lbs of pecans during Christmastime than to make candied pecans. Reader beware- these guys are ADDICTING!
1 lb pecan halves
1/2 cup brown sugar
1/2 cup granulated sugar
1 tsp cinnamon
1 tsp table salt
2 tsps vanilla
1 tsp water
1 egg white
In a large bowl, whisk egg white with water and vanilla until frothy. Note: the most efficient way to whisk is by moving a whisk back and forth, not around in a circle. Toss the pecans in the frothy mixture until all the pecans are covered. This will help the sugar bind to the pecans. In a separate bowl, mix together both sugars, cinnamon, and salt. Pour sugar mixture into pecans and mix until coated evenly. Spread the pecans onto a cookie sheet with parchment paper and bake at 250F for one hour, mixing every 15 minutes.
These were a huge hit with my family! Even the pickiest of eaters will love these. And they’re great for sharing, because you’ll want to eat the whole pound if you keep them around!
